Prosciutto and Spinach Stuffed Chicken Breast

This recipe was SUPER easy and my kids really enjoyed helping!



-4 thinly sliced boneless skinless chicken breasts (approx 4 oz each)
-Seasoning (I used Salt, Pepper, Paprika and Chopped Parsley)
-4 slices Prosciutto
-1 cup organic spinach leaves
-1 Tbsp Olive Oil
-4 Toothpicks (to hold the folded chicken breast together)


1. Heat Oven to 350 Degrees
2.  Place the chicken breast flat and seasoned both sides with your favorite seasoning.
3.  Place a slice of prosciutto on each chicken breast.
4.  Next, take the organic spinach and placed it on top of the prosciutto.
5.  The last step is to roll the chicken breast up and use a toothpick to hold the stuffed chicken breast together.
6.  Bake for about 15 minutes

This dish is great for lunch without any additional side but for my family’s dinner, I chose to add a baked yam!  Hope You Enjoy!

Unleash Your Hidden Treasures


Each one of us has a hidden treasure of talent.  Have you ever been that someone who taught a new skill that might have helped to build someone else’s confidence? I mean, think about it?  What an awesome feeling it is when you have stepped out of your comfort zone and have someone to believe in you and help you along the way? If we could get someone to take the first step out of their comfort zone, let them know and show them that we’re there to support them along the way, imagine how comforting that would be for that individual?

aloneSadly, there are many individuals who have never had someone there to cheer them on or who have never been shown that someone has believed in them.  It’s normal to assume that the initial support system one should have should come from immediate family and close friends but I’ve learned that it has not been the case for many.  Sometimes, when an individual steps out to accomplish their goals in life, they receive discouragement from those who are closet to them.

Many times, the ones who are doing the discouraging are the same ones who never had anyone there to encourage them or they just might be facing their own insecurity issues.  Unfortunately, some are this way because it is the only way that they have ever known.  Learned behaviors can really hinder individuals from their growth potential but the good thing is that we all have a choice to renew our minds and live a more fulfilling lifestyle.  There are so many resources available these days to help individuals to obtain the lifestyle they wish to have.  The key is to be willing to do what it takes and to have the discipline to continue doing what is required.

Garlic Peppered Baked Flounder






Cooking Spray or Olive Oil

4 Flounder Fillets (6 ounces)

2 teaspoons of Garlic Pepper Seasoning (or your favorite seasoning)

2 shallots thinly sliced

2 garlic cloves thinly sliced

4 lemon wedges

1 teaspoon of parsley flakes



Heat oven to 375 degrees

Use cooking spray to coat roasting pan or as an alternate, drizzle with olive oil.

Sprinkle Garlic Pepper seasoning on both sides of Flounder Fillets

Spread the thinly sliced shallots and Garlic over the fish

Bake for 18 minutes

Remove from oven and squeeze the lemon juice from the lemon wedges over the fish and place the wedges in the pan and sprinkle cooked fish with the parsley flakes.


Serve with your favorite side dish
